Mr Ang is a Chinese Muslim who runs this Muslim-friendly char kway teow stall, and he proudly displays his conversion card up front.

What makes his version stand out is the sauce. It is a sweet, savoury blend and the chilli is automatically folded in. I suspect this suits the Muslim palate and I see why. That spiciness kicks in but does not
overwhelm.

All the attendant ingredients are in place, from cockles, fish cakes and bean sprouts, minus the Chinese sausage slices.

Best to order a $3 portion and add $1 extra cockles for maximum pleasure.
Sure to order with extra cockles.

We shared 15 sticks of chicken satay and 2 ketupat for $8.60. Each stick was glistening but only lean meat is used. One bite of satay was full of flavours, with a slightly charred exterior. The meat was tender and goes very well with the soft ketupat that has a melt-in-your-mouth texture. It was so addictive that we devoured stick after stick and before we know it, the plate was completely empty.

Interesting dishes. It is so difficult to find Pig Trotter Jelly (or Pork Aspic) nowadays because this traditional teochew cold meat is very labour intensive that very few places are willing to do it.

I am so glad to have visited Lao Liang because it is one of the very few hawker stalls that sell only pig trotter jelly and shark meat now.

Thanks for sharing. I love Pig Trotter Jelly and Shark meat. Missed those days when my parent brought us to a stall in Alanboro Market (current Merchant Court Hotel location) that specialise in teochew foods for meals. If anyone knows the stall is still operating, please share with me or pm me. Thanks
