麵包糕點 含鋁損腦

【本報訊】港人愛吃麵包,但《蘋果》委託獨立化驗所抽驗五家麵包店共十款麵包,四個鬆餅全部含 重金屬鋁,麵 包新語的提子鬆餅含鋁量更達每個27毫克,成人每周吃四個已超鋁攝取量上限,長期食用或致腦部 疾病,兒童攝 入過量更會阻礙智力發展。多款麵包也含太多鹽,百佳的蒜茸軟包含鈉量達5,740ppm,吃一 個已是每日建 議鈉攝取量近半。

本報委託香港標準及檢定中心化驗,發現麵包新語的提子鬆餅含鋁量達306ppm,即每公斤鬆餅 含306毫克 鋁。

世界衞生組織建議,人類每公斤體重,每周最多可攝取2毫克鋁,即一50公斤重成人每周不應攝取 多於100毫 克鋁。以一個麵包新語(BreadTalk)的提子鬆餅重約90克計,每個約含27毫克鋁,一 周吃四個便超 出鋁攝入量上限;若只重30公斤的兒童,吃兩個便接近警戒線。
來自發粉 可令麵包膨脹

百佳的英式鬆餅、city’super香蕉全麥鬆餅及A-1 BAKERY草莓朱古力英式鬆餅,同樣含鋁但未算太多,平均每個只有1毫克鋁。本港目前沒有規管食物鋁含量 ;內地曾規定每公斤麵包含鋁量不可超過100ppm,但去年已取消規定。麵包的鋁多來自製作鬆 餅、馬拉糕等 用的發粉,部份發粉含碳酸氫鈉、硫酸鋁鈉及磷酸鋁鈉等含鋁的添加劑,可令麵包膨脹,但其後或會 殘留。
有研究指會致老人癡呆症

鈉則大多來自食鹽,世衞建議成人每日不應攝取多於2,000毫克鈉,約一茶匙鹽。化驗顯示,百 佳的蒜茸軟包 含鈉量達5,740ppm,以每個重160克計,吃一個等於吃掉750毫克鈉,佔每日攝取上限 四成。

百佳及A-1 BAKERY的鬆餅含鈉量都超過4,600ppm,吃一個約為攝取上限的四分一。city’super香軟 米包看似清淡,但鈉含量也達4,300ppm,A-1 BAKERY丹麥酥麵包也有3,830ppm。
港大內科學系腦內科教授張德輝稱,鋁在體內大量聚積會影響腦神經及肝腎功能,有研究認為食用過 多含鋁的食物 會導致腦退化及老人癡呆症,但未有證據。鋁也會積聚在骨骼及導致骨質疏鬆,甚至阻礙兒童內臟發 育及腦部智力 發展,造成永久影響。但他補充,鋁一般不易吸收,會由腸胃及肝臟排出體外。

營養學會會長丁浩恩則指,攝取過多鈉會影響腎功能、增加患高血壓及心血管疾病風險,但港人普遍 攝取比建議標 準多一倍的鹽份,他建議少吃醃製及加工食物。

食物安全中心表示,本港成年人每周平均從食物中攝取0.6毫克鋁,只佔世衞建議30%,不會對 健康有急性不 良影響。中心去年也向業界發指引,籲減少添加鹽。
