ST food critics share their 8 picks for yummy prawn noodles
http://www.straitstimes.com/lifestyl...-prawn-noodles MING'S PRAWN NOODLE While many of his peers found jobs in restaurants after graduation, At-Sunrice GlobalChef Academy alumnus Cai Jiaming, 26, chose the hawker route instead. Almost every day, he heads to Jurong Fishery Port at 3am to pick the freshest prawns and to a wet market to get his supply of pork ribs. At about 5am, he gets his master stock going for the day. Six months on, Mr Cai's Ming's Prawn Noodle stall, at Alexandra Village Food Centre, has drawn a steady following of loyal customers. The menu is simple - prawn noodles or pork rib noodles, priced at $3.50 each. Or have the best of both worlds with the pork ribs and prawn noodles for $5. It is a rainy morning when I head to the stall, so I pick the comforting pork rib and prawn noodles in soup without hesitation. The very polite Mr Cai asks me to pick my noodle of choice - I go for the yellow noodles. Next question. Would I like my prawns shelled? Now, that is a very thoughtful option for people who do not want to get their hands dirty or are lazy, like me. Shelled please. He then directs me to the tub of fried lard. I can add my own and, of course, I do. There is ground chilli powder and sliced red chilli to spice up the soup. On my tray, he places a (free) wet towel and cheerfully wishes me an enjoyable meal. While the hot soup does not look as rich as others I have tried, it is still flavourful. It is light and I drink up most of it. I get three plump prawns, along with three pork ribs. The prawns are bigger than usual and extremely fresh. While the pork ribs are slightly fatty, the meat is tender and juicy. The dish also includes beansprouts and kangkong. Mr Cai admits that it has been a tough learning experience and that he hopes his decision to take the "more challenging" route is worth it. The chef may not be in a restaurant, but his service and cooking are top-notch. I hope he perseveres. WHERE: Ming's Prawn Noodle, Alexandra Village Food Centre, 120 Bukit Merah Lane 1, 01-01 MRT: Queestown OPEN: 7.30am to 4pm (Thursdays to Tuesdays), closed on Wednesdays

Soi 19 Thai Wanton Mee
#01-3030 Stall 5 7 Star Coffee Shop, 151 Ang Mo Kio Avenue 5, 560151 Was craving for a bowl of Thai Wanton noodles and decided to try the Soi 19 wanton noodles i've heard good things about in Ang Mo Kio. It was a Sunday and we arrived at around 11am to be greeted with this long queue which extended to the outer vicinity of the coffee shop they were housed in. The price of the noodles ranged from $3.50 to $6 per bowl depending on your preference. You'll have lots of time to reflect and decide in the queue so there's no need to worry prior to queuing. We ordered 3 bowls for each one of us after queuing for about 1 hour. I got large bowls for 2 and 1 with black sauce which added to a total damage of $15. You can see that the large bowl gave more ingredients which is the fried pork belly char siew, additional fried wantons, chinese sausage (lup cheong), vegetables and wantons. Unless you're a big eater, the noodles are enough as it is. From the 2 variations, i found the black sauce noodles tasted better. The noodles used seems to be a variation of the Kolo Mee found in Sarawak Malaysia albeit slightly thinner. This is a love it or hate it kind of thing for patrons and judging by the queue, many people loved it. Since our bowl had additional ingredients, its nice to note that the stall uses their interpretation of "Bu Jian Tian" char siew which we fell in love with in the Tiong Bahru market stall that you can read here. This version, though using the same part, is sliced thinner and the char siew sauce is less fragrant when compared to Zhong Yu Yuan Wei. It still has its charm i believe. The lup cheong however, did not sit well with my wife and was left largely untouched. The vegetables and fried wanton are very serviceable as long as you do not expect anything special about them. The wanton broth is salty and peppery which some people like and the wantons are nice despite their small size. We did find the wanton skin a tad thicker then usual. Overall, the wanton noodles here are well made and with the queue, many people loved it enough to queue 1 hour for it. Verdict: Good if there's no queue

Zao Lek Lok Lok: Boil, BBQ, Deep Fried Skewered Foods Now in Singapore Too
Read more: http://sethlui.com/zao-lek-lok-lok-s...#ixzz4QnQ402VK Gone are the days when we’ll have to cross the boarder into Johor Bahru for lok lok, or dip skewered foods to boil in a steamboat. While there are a handful of lok lok places popping up in Singapore, Zao Lek Lok Lok sets itself apart with the vast variety of dipping sauces it has, along with a manned barbecue and deep fried station. Offering a lok lok buffet ($24 nett/pax), Zao Lek Lok Lok has recently also expanded into an ala carte menu, and has just gotten its approval for serving beers at its premise. Up to six flavours are available on its menu, which includes chicken soup, Ma La, Tom Yum, $$$$$, Bak Kut Teh, and Satay (additional $4). Being lovers of spicy foods, we chose Ma La for our first soup base and Bak Kut Teh for the second, as it is quite uncommonly seen as a broth for steamboat. I’d suggest not drinking the soups as they are saltier and more concentrated, more to flavour and season the food while they cook rather than for drinking. A wide selection of skewered vegetables, meats and seafood were displayed and kept fresh in the fridges. As with eating at a buffet, grab a tray and feel free to go crazy with piling it up, but finish it too lah don’t waste food. Some of our favourites were the smoked duck, bacon wrapped Enoki mushrooms, mantous (buns), vegetables wrapped in bean curd skin. Once you’re satisfied with what’s on your tray, you may choose to cook them in three ways — to boil in the individual steamboat, bbq or deep fry. If you’re not sure which methods of cooking would be better, just leave it in the hands of the friendly staffs and they will use the most appropriate method for your ingredients. Lok lok is all about unashamedly dipping the foods into the sauces, licking every bit up even if it drips onto your fingers. At Zao Lek Lok Lok, you’d find tubs of sauces like Thai Green Chilli Sauce, Chilli Crab Sauce, Fresh Hainanese Chilli, Sambal Chilli, Sweat Bean Paste, Dark Soy Chilli & Garlic, and Sweet & Spicy Thai Sauce. Do look out for promotions that are going on its Facebook page, and extra touches that Zao Lek Lok Lok provides for an enjoyable lok lok experience with your friends. It’s pretty affordable and a throwback to good ol days, so do come visit Zao Lek Lok Lok. Expected damage: $2.50 for 3 sticks – $24/pax Zao Lek Lok Lok: Paya Lebar Kovan CC, 207 Hougang Street 21, Singapore 530207 | Tel: 6282 4005 | Facebook | Opening Hours: Daily 530pm – 1130pm
